One of the best known work manga in Japan. "Houchou" literally means "kitchen knife". Ajihei's father was an expert traditional chef. Ajihei shocks his father by working in a fast food restaurant. Ajihei wants to become the best at making inexpensive, tasty food for the masses.

Just like "Kugishi Sabuyan", this manga is filled with information (the writer has also worked in a restaurant). It became a runaway success, giving way to numerous noodle shops carrying the name of Ajihei.
